Recipe: Smoked Salmon Omelette

What a great way to start the morning with those wonderful, healthy fats from smoked salmon and extra virgin olive oil. Hands down, salmon with eggs is my favourite breakfast, lunch or dinner 🙂 .  It is a high protein recipe, and you can add lots of fresh ingredients such as tomatoes, onions, lettuce leaves and cilantro.

Though I haven’t included it into the recipe, if you want to add some calories to the recipe, a couple of wholegrain pieces of toast goes very well.

Also, I often like to add some spice. Gently frying a red onion and some red chilli to add to the omelette is delicious, but if you are having this for breakfast, it might be a bit too much. This Smoked salmon omelette is simple and can be had for breakfast, lunch or dinner. Follow my simple method below and enjoy!

 

Current ingredients

100.00 g Salmon, smoked, sliced
100.00 ml Milk, cow, fluid, skim (fat approximately 0.15%)
90.00 g Egg, chicken, whole, raw
20.00 g Cheese, parmesan, finely grated
5.00 ml Oil, olive, pure
50.00 g Tomato, cherry, raw

Method

  1. In a small bowl whisk together whole eggs and milk until the mixture is light and fluffy. Spray a non-stick pan with extra virgin olive oil.
  2. On low to medium heat pour in your egg mixture. As your omelette begins to cook pick up your pan and swirl to cook the omelette thoroughly.
  3. Add in the cherry tomatoes and top with smoked salmon, red onions (if you choose), and parmesan cheese.
  4. I often place the pan under the grill for a couple of minutes at the end, until the omelette cooks thoroughly on top.
