Spaghetti and Meatballs is a signature favourite. So many people feel that they need to avoid pasta when they are trying to drop a few kilograms, but that is not always the case. At Mums’ Magic Touch we always opt for high fibre and wholegrains for optimum health and wellbeing. If you can’t tolerate the texture of wholewheat spaghetti, then choose a high fibre option at the supermarket. We choose fresh all the way with our pasta, whether we make it ourselves or buy fresh pasta at the store, but it is really whatever suits you.
To make the meatballs we always choose turkey because we always try to limit our red meat consumption for better health, although red meat is not the enemy and you may choose to use beef instead of turkey for this recipe. It is totally up to you. I like to pack the meatballs with herbs and vegetables. Some of us prefer chunks, but my six year old would not eat them if she found any chunky vegetable pieces, so in our household, we puree the vegetables 😦 at least for now. I usually puree some capsicum, red chilli, onions, and coriander, always removing the seeds from the chilli to reduce the spice for Miss 6. You can make your meatballs healthy with any vegetables that you like. Chunky pieces of capsicum, chilli, spinach, onion and carrot are always a good choice.
Cooking tomato sauce from scratch takes a long time, but it is simple, flavourful and packed with nutrients. It is a great way to sneak those vegetables in for fussy eaters too.
